Watermelon and Elderberry Basil Vodka Tonic

Ingredients:
- 1-1.5 tablespoons of Summa Salt’s Elderberry Basil Salt
- 2 cups fresh watermelon, cubed and seeds removed
- 4 ounces vodka
- 1/4 cup fresh basil leaves, plus extra for garnish
- 1 tablespoon lime juice
- 1 teaspoon honey or simple syrup (optional, for added sweetness)
- 8 ounces tonic water or club soda
- Ice cubes
- Lime wedges, for garnish
Instructions:
- Prepare the Glass Rim:
- Place a small amount of water or juice on a plate. Dip the glass on the plate to wet the rim of the glass.
- Dip the glass in the Summa Salt Elderberry Basil Salt rimmer container and roll the top of the glass into the salt until fully covered.
- Set aside.
- Prepare the Watermelon Juice:
- In a blender or food processor, blend the cubed watermelon until smooth.
- Strain the watermelon puree through a fine mesh sieve into a bowl or pitcher to remove the pulp. Set the watermelon juice aside.
- Muddle the Basil:
- In a cocktail shaker, add the fresh basil leaves and muddle gently to release the oils and aroma.
- Mix the Cocktail:
- Add the vodka, lime juice, and honey or simple syrup (if using) to the shaker.
- Pour in the strained watermelon juice.
- Fill the shaker with ice and shake well until the mixture is chilled.
- Assemble the Drink:
- Fill two highball glasses with ice cubes.
- Strain the watermelon-basil-vodka mixture evenly into the glasses.
- Top each glass with tonic water and stir gently to combine.
- Garnish and Serve:
- Garnish each drink with a sprig of fresh basil and a lime wedge.
If you do not have a shaker, feel free to simply enjoy the drink directly on ice. Enjoy!
