Thai Basil Coconut Rice

This creamy, fragrant Thai Basil Coconut Rice comes together in just a few steps—and gets a major flavor upgrade from our handcrafted Thai Basil Salt. Whether you're pairing it with grilled chicken, veggies, or a quick curry, this dish is a surefire crowd-pleaser.
Ingredients:
- 1 cup jasmine rice, rinsed
- 1 cup coconut milk (full fat)
- 1 cup water
- 1 tbsp unsalted butter or coconut oil
- 1 tsp Summa Salts Thai Basil Salt (or more to taste)
- Optional: chopped scallions, toasted sesame seeds, or fresh Thai basil for garnish
Instructions:
- In a medium saucepan, combine the rice, coconut milk, water, and butter/oil. Bring to a low boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for 15–18 minutes until the liquid is absorbed and the rice is fluffy.
- Turn off the heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
- Sprinkle in Thai Basil Salt and stir to combine. Taste and add more if desired.
- Serve warm with your favorite protein or vegetables. Garnish if you’re feeling fancy.
