Ingredients
- 1.5 lbs bone-in, skin-on chicken thighs (about 4–6 pieces)
- 1 tbsp olive oil
- 1.5 tsp Summa Salts Lemon Herb Salt
- Fresh cracked pepper (optional)
- Lemon wedges, for serving
Instructions

- Pat chicken thighs dry with paper towels. This helps them crisp up.
- Rub each thigh with olive oil and season generously with Lemon Herb Salt on all sides.
- Place thighs skin-side up on a foil-lined sheet pan or in a cast iron skillet. Add cracked pepper if using.
- Roast for 30–35 minutes, or until the skin is golden and the internal temp hits 175°F.
- Broil for 2–3 minutes at the end for extra crisp skin, if desired.
- Rest 5 minutes. Squeeze fresh lemon over top and serve.
Serving Suggestions
Pair with crispy potatoes, grilled zucchini, or over a big market greens salad. Bonus points if you sprinkle a little extra Lemon Herb Salt before serving.
