Herb & Garlic Smashed Potato Bites
A crispy, cheesy side dish or appetizer that bursts with flavor thanks to our Italian Herb Salt.
Ingredients:
- 1.5 lbs baby yellow potatoes (about 15–20 potatoes)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp melted butter (optional for extra richness)

- 2 tbsp grated Parmesan cheese
- Fresh parsley or chives (optional garnish)
Instructions:
- Boil potatoes: Place potatoes in salted water and boil until fork-tender (about 15–20 min). Drain and let cool slightly.
- Smash: Place on a parchment-lined baking sheet and gently smash each one with the bottom of a cup or small pan.
- Season: Drizzle with olive oil, sprinkle with minced garlic, melted butter (if using), and Italian Herb Salt.
- Roast: Bake at 425°F (220°C) for 20–25 minutes or until golden and crispy on the edges.
- Finish: Sprinkle with Parmesan while hot. Garnish with fresh herbs if desired. Serve warm.
