Herb & Garlic Smashed Potato Bites

A crispy, cheesy side dish or appetizer that bursts with flavor thanks to our Italian Herb Salt.

Ingredients:

  • 1.5 lbs baby yellow potatoes (about 15–20 potatoes)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp melted butter (optional for extra richness)
  • 1–2 tsp Summa Salts Italian Herb Salt
  • 2 tbsp grated Parmesan cheese
  • Fresh parsley or chives (optional garnish)

Instructions:

  1. Boil potatoes: Place potatoes in salted water and boil until fork-tender (about 15–20 min). Drain and let cool slightly.
  2. Smash: Place on a parchment-lined baking sheet and gently smash each one with the bottom of a cup or small pan.
  3. Season: Drizzle with olive oil, sprinkle with minced garlic, melted butter (if using), and Italian Herb Salt.
  4. Roast: Bake at 425°F (220°C) for 20–25 minutes or until golden and crispy on the edges.
  5. Finish: Sprinkle with Parmesan while hot. Garnish with fresh herbs if desired. Serve warm.
