Ingredients

For the Chicken Thighs

  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp Vampire Killer Salt
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Fresh cracked black pepper

For the Mac & Cheese

  • 8 oz elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar
  • Salt & pepper, to taste

Instructions

1. Season the Chicken

Pat chicken thighs dry. Rub with olive oil, then coat with Vampire Killer Salt, paprika, and cracked pepper. Let rest uncovered in the fridge for 30 minutes.

2. Sear & Roast

Preheat oven to 425°F. In an oven-safe skillet over medium-high heat, sear chicken skin-side down until golden (about 5 minutes). Flip and transfer skillet to the oven. Roast for 18–22 minutes or until internal temp hits 165°F.

3. Make the Mac

While chicken roasts, cook pasta. In a saucepan, melt butter and whisk in flour. Add milk slowly, stirring until thickened. Stir in cheese, season, and fold in pasta.

4. Serve It Up

Plate two thighs with a generous scoop of creamy mac. Sprinkle a little extra Vampire Killer on top for good measure.
