Ingredients
- 2 farm eggs
- 1–2 Yukon gold or red potatoes, thinly sliced
- Olive oil or butter, for cooking
- Summa Salts Brunch Salt
- Fresh herbs (optional, for garnish)
Instructions
- Heat a skillet over medium heat and add a drizzle of olive oil.
- Add the thinly sliced potatoes and cook until golden and crisp, flipping as needed (8–10 minutes).
- Push potatoes to one side and crack in your eggs. Cook sunny-side up or to your liking.
- Sprinkle Brunch Salt over the eggs and potatoes while hot.
- Garnish with herbs if desired. Serve immediately with toast and coffee.
